There is a saying you still hear in the Tuscan countryside, usually from a nonna standing over a pot that has been simmering since before you woke up: "Si mangia quello che c'è" — you eat what there is. It sounds almost like an apology. It is not. It is the whole philosophy of Tuscan home cooking in five words.
For centuries the Tuscan table was set by contadini — sharecropping farm families who worked land they did not own, under a system called mezzadria that lasted, astonishingly, into the 1960s in some valleys. Half of everything they grew went to the landowner. What was left over was cucina povera: the cooking of poverty. Stale bread, beans, whatever vegetable the season allowed, a little oil, a lot of patience.
And yet, ask anyone who has eaten a proper ribollita on a cold night in the Mugello, or a bistecca alla Fiorentina charred over a wood fire in the Chianti hills, and they will tell you this "poor" cooking is some of the most satisfying food in the world. That is the paradox this little book wants to explore: how hunger and scarcity, over generations, refined themselves into an art.
This is not a comprehensive cookbook — fifty pages could never hold the whole of Tuscan cuisine, and any Tuscan grandmother would tell you so with a raised eyebrow. Instead, think of it as a passeggiata, a slow walk through three pillars of the Tuscan kitchen: the zuppe that stretched a few vegetables into a meal for eight; the carne alla brace, the meat cooked simply over embers because good ingredients need no disguise; and pane sciocco, the strange, saltless bread that tells you more about Tuscan history than almost anything else on the table.
Along the way you will find curiosità — small true stories, oddities and bits of kitchen folklore — tucked into boxes like a nonna interrupting her own story to tell you a better one. And at the back, a handful of real recipes, written the way they are actually cooked in Tuscan homes: by feel, by season, and without much fuss.
