Why pasta is chemistry, not magic
There comes a moment, for anyone who cooks with any regularity, when pasta stops being a family ritual and starts asking questions. Why do two doughs made from the same ingredients, on the same day, produce two different results? Why does one sheet tear while another doesn't? Why does the same recipe, made by two people in two different kitchens, produce two pastas with opposite character? The answer isn't luck, nor some innate gift that some people have and others don't. It lies in the chemistry and physics of the material we're working with: flour, water, eggs, heat, salt, time.
This book was born from a simple conviction: pasta is one of the oldest and, at the same time, one of the most scientifically fascinating preparations in Italian cooking. Behind every hand-rolled sheet, every bronze-extruded macaroni, every perfectly creamed dish, lies a set of physical and chemical reactions we can understand, predict, and above all control. Understanding why gluten forms, why egg yolk changes a dough's structure, why starchy pasta water is the most valuable tool we have for binding a sauce — none of this takes anything away from the poetry of the gesture. If anything, it makes it more deliberate.
Italian pasta cooking has a feature that sets it apart from many other culinary traditions: it is at once extremely rigorous and deeply regional, codified and endlessly variable. Bolognese tagliatelle and Apulian lagane come from different dough logics not by chance, but because they respond to different climates, available flours, uses of the dish, and preservation needs. There is, therefore, no single "correct" pasta: there are doughs that are coherent with the purpose they were designed for. And it is exactly this coherence — this cause-and-effect relationship between ingredient, gesture, and result — that is the subject of our inquiry.
