Ask an American what an Italian dessert looks like, and nine times out of ten you will hear one word: tiramisù. It is a wonderful dessert — I would never say otherwise — but it is also only one small window in a house with a hundred rooms. Behind that window is a country where every region, sometimes every town, guards its own version of sweetness: a version shaped by the almonds that grow on a particular hillside, the citrus that ripens on a particular coast, the nuns who once kept a particular convent's ovens burning before dawn.
I grew up in a kitchen in Emilia-Romagna where my grandmother rolled pasta frolla on a marble slab worn smooth by three generations of elbows. My father's family, further south, made cannoli shells so thin you could read a newspaper through them. My own career has taken me from pastry kitchens in Bologna to bakeries in Palermo, and everywhere I went, I found the same lesson waiting: Italian dessert-making is not about extravagance. It is about restraint, about letting two or three excellent ingredients speak clearly, without a chorus of unnecessary flavors shouting over them.
This book is my attempt to widen that window. We will make cannoli the way they are made in the back streets of Palermo, with a shell that shatters and a filling that is barely sweet enough to let the ricotta taste like itself. We will explore panna cotta, a dessert so simple it is almost a trick — cream, sugar, and the faintest whisper of gelatin — and discover why getting it exactly right takes real skill. We will build crostate, the jam and fruit tarts that appear on Sunday tables from the Alps to Sicily, each family insisting theirs is the only correct recipe. And we will step into the world of colazione — Italian breakfast — where cornetti, maritozzi, and bomboloni prove that even the first meal of the day deserves real craftsmanship.
A note on approach: I have written every recipe for the home kitchen, tested with the flours, sugars, and ovens you are likely to have in the United States. Where a technique matters — the temperature of your cream, the way you fold rather than stir — I have tried to explain why, not only what, because understanding a method is what lets you make it your own.
