The First Class (cartes Jaunes) consists of excellent Apples, and it gives twenty four varieties. The Apples in this Class contain Sugar, Alcohol, Tannin and Perfume in sufficient quantities to yield a rich, long-keeping Cider Of excellent perfume and flavour; whilst it retains a sufficient amount of unreduced Sugar, to give sweetness, and enough Tannin, to give strengthening virtues, and at the same time to moderate the action of the Alcohol. The Second Class (cartes Blanches) consists of very good Apples, and it gives fifty one varieties. These Apples yield juices with sufficient Sugar, Tannin, and Perfume to make a rich good keeping Cider.
